Gingerbread has been an American favorite for generations. Its history reaches back to a time long before the founding of our country, however—about 3,000 years, in fact. For centuries, many versions of gingerbread existed around the globe. There is little doubt, though, that American recipes were most influenced by 18th-century British gingerbreads. Rolled and shaped gingerbread cakes (cookies, really), sweetened with sugar, molasses, and/or treacle, frequently appeared in British cookery books of this period. Many Colonial Americans, already well versed in British cooking styles, owned and cooked from these books, thus perpetuating English culinary traditions. Read more »
